Our standard dimensions are 18" x 12" x 1.5" which gives you enough room to break down multiple vegetables or carving up meat. Using edge grain hardwoods will prolong the sharpness of your knives as it is hard enough to resist the cut, but has enough give to not dull the fine edge. Juice grooves are an addon feature if you see yourself having lots of liquids trying to escape onto your countertops. Likewise, handles are also an option if you see yourself moving it frequently to different spaces around your kitchen.
